Quick & Easy Vegan King Cake

Cinnamon Rolls:

Ingredients:

1 approximately 17.5 ounce container vegan refrigerated premade cinnamon rolls with icing (Brands like Annie’s are vegan. Always double check ingredients. Sometimes the cinnamon rolls are vegan but the icing is not. Or use your own cinnamon rolls recipe!)

Sour Cream Praline Sauce (recipe follows)

Decorative sugars in yellow, green, and violet

Small plastic baby

Directions:

Oil an oven-proof skillet or 8 or 9-inch cake pan. Space individual rolls evenly round periphery of skillet or pan. Bake as directed or until lightly golden brown.

When cinnamon rolls are done, remove from oven and let sit 10 minutes before inverting the ring of rolls onto wire rack and again onto serving platter.

Insert plastic baby into the center of one of the rolls—and remind your diners that someone’s slice will contain it—before spooning or spreading icing over each roll while still warm, decorating with colored sugars, and serving warm Sour Cream Praline Sauce on the side. Whoever’s slice contains the baby serves the King Cake next year!

Sour Cream Icing:

Ingredients:

(If preparing your cinnamon rolls from scratch.)

1/2 cup Tofutti Better Than Sour Cream

1 cup powdered sugar

1/4 cup vanilla extract

Optional: 1/8 teaspoon almond extract

Directions:

Whisk together Tofutti Better Than Sour Cream with 1 cup powdered sugar, 1/4 cup at a time. Whisk in vanilla extract and optional almond extract and set aside until time to use. Thin if necessary with teaspoons of sour cream or non-dairy milk.

Sour Cream Praline Sauce:

Ingredients:

3/4 cup packed dark brown sugar

1/2 cup Tofutti Better Than Sour Cream

2 tablespoons vegan butter

1 tablespoon agave nectar or corn syrup

1/2 cup coarsely chopped pecans, toasted or not

Optional: 1/4 teaspoon vanilla extract + 1/8 teaspoon almond extract

Directions:

Combine brown sugar, Tofutti Better Than Sour Cream, vegan butter, and agave nectar in small saucepan over medium to medium-low heat. Whisk until melted and fully combined.

Simmer gently for about 2 minutes, whisking continually, then remove from heat and whisk in pecans and extracts if using. Serve immediately or gently reheat before using.
