Refreshing peach, walnut, ricotta crostini

It’s hot out there…but you still got to eat! So why not give this recipe for Peach, Walnut and Ricotta Crostini a try? Crostini is the perfect light, airy summer time snack. Margot over at Summer Cookbook cooked it up.

She tops browned baguette (or ciabatta bread) with tasty stuff like walnuts, ricotta cheese, sea salt, olive oil, and peach slices. Peach slices! That’s the cool part!

And Margot mentions that Tofutti Better Than Ricotta Cheese works as a nice substitute to regular ricotta cheese. Thanks, Margot!

Tofutti Better Than Ricotta Cheese is great for many Italian inspired creations, like this Eggplant Rollatini from Tofutti’s official food blogger Cindy Rader.
