Tofutti Better Than Cream Cheese Sandwich Cookie Delights
3 8oz. containers of Tofutti Better Than Cream Cheese
1 cup sugar
1 cup soy yogurt
1 1/2 t. vanilla extract
1 cup crushed sandwich cookie, reserve 1/2 cup for topping cupcakes
24 sandwich cookies
1 cup Tofutti Better Than Sour Cream
1/4 cup sugar
1/4 t. vanilla extract
In a paper lined cupcake pan, place one full size sandwich cookie in each liner. Combine remaining cake base ingredients and 1/2 cup of crushed sandwich cookies until well blended using electric mixer.
Fill lined cupcake papers 2/3 and bake at 325 degrees for 35 minutes.
Remove cupcakes from the oven. They will fall in the middle creating a spot for the filling to be placed. Top each cupcake with 1/2 t. filling and 1/2 t. cookie crumbs.
Bake an additional 5 to 8 minutes. Cool completely and refrigerate.
Yields 24 cupcakes.
