Dried Fig and Olive Dip
Ingredients:
1/4 cup large dried figs in a small cup or bowl covered with 1/4 cup vegan cream sherry or warm water to macerate
12 ounces Tofutti Better Than Sour Cream or Tofutti Roasted Garlic Dip, slightly softened at room temperature with lid removed
1 tablespoon vegan Worcestershire sauce or Liquid Aminos
1/4 cup green onions, thinly sliced (about 2 medium-large)
1/4 cup pitted Kalamata olives, coarsely chopped
1/4 cup pistachios, coarsely chopped
2 teaspoons cream sherry from macerated figs, if using (save remainder for another dish)
1 tablespoon Everything Bagel Seasoning (or 1/4 teaspoon each garlic powder and onion powder)
1/4 teaspoon freshly ground black pepper
Optional: 1 tablespoon nutritional yeast
Optional garnishes: Kalamata olive slices, green onion slices, whole or chopped pistachios, and/or Everything Bagel seasoning
Accompaniments: cucumber slices or other raw vegetable slices or strips, assorted crackers, bagel chips, etc.
Directions:
With a fork, stir together all ingredients, except garnishes and accompaniments, in a medium bowl, draining, coarsely chopping, and adding macerated figs at the end.
Serve immediately, garnished as desired, with choice of accompaniments. Or chill, covered, for several hours or overnight to allow flavors to marry before serving.
