Nashville Hot Chick’un & Waffle Casserole

Ingredients:

8 ounces Tofutti Better Than Cream Cheese

1/4 cup Sriracha or favorite vegan hot sauce

2 tablespoons amber agave nectar

1 teaspoon poultry seasoning

1 1/2 cups cooked riced cauliflower

1 1/2 cups lightly seasoned seitan or tofu cubes

1/2 cup diced bread and butter pickles

Topping: waffle pretzels and bread and butter pickle slices

Directions:

Preheat oven to 350 degrees. Oil an 8-inch casserole dish or oven-proof skillet. Place Tofutti Better Than Cream Cheese, Sriracha, agave nectar, and poultry seasoning in large microwave-safe bowl and heat for 1 minute. Remove and stir well to completely combine.

Fold in riced cauliflower, seitan or tofu, and pickles. Transfer to prepared casserole dish or skillet, cover top with alternating pretzels and pickle slices, and bake for about 20 minutes or until heated through. Serve immediately.
