Crunchy Cauliflower Slaw

Ingredients:

Slaw:

4 cups broccoli slaw mix (if unavailable, your favorite slaw mix will work nicely

2 cups riced cauliflower (purchased or made by pulsing raw cauliflower in food processor to create pieces the size of rice)

2 medium nectarines, pitted, and cut into 12 wedges, each wedge cut into thirds

Optional: 1 large cucumber, halved lengthwise, seeds scooped out with a spoon, and thinly sliced

1/2 cup diced red onion

Creamy Dill Dressing (recipe follows)

Garnish: roasted and lightly salted sunflower seeds

Directions:

Toss together all ingredients into a very large mixing bowl until all ingredients are well-distributed. Drizzle dressing over and then toss again until fully incorporated.

Chill, covered, until serving time or serve immediately, garnished with sunflower seeds.

1/2 cup Tofutti Better Than Sour Cream

1/4 cup agave nectar

1/4 cup apple cider vinegar

1/4 cup finely chopped fresh dill weed

Optional (but recommended): 4 teaspoons Everything Bagel Seasoning

2 teaspoons stone ground mustard

1 teaspoon sea salt or to taste

1/2 teaspoon freshly ground black pepper or to taste

1/2 teaspoon garlic powder

Directions:

Whisk together all ingredients in a small bowl until smooth, creamy, and completely combined.
