Everything Bagel Pot Pie
Ingredients:
1 can vegan biscuits (some big brand varieties are vegan) or 7 to 8 homemade biscuits, uncooked
1 tablespoon melted vegan butter or vegetable oil
Approximately 2 tablespoons Everything Bagel seasoning (available in spice aisle of most grocery stores)
1/2 cup all-purpose flour
1/2 cup nutritional yeast
1/4 cup + 2 tablespoons vegetable oil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 cups warm vegetable broth, or 2 bouillon cubes or 2 teaspoons vegetable base dissolved in 2 cups warm water
1/2 cup Tofutti Better Than Sour Cream
2 cups cooked mixed vegetables like peas, diced carrots, corn, and green bean pieces, steamed, grilled, microwaved, or 16 ounces frozen thawed (canned vegetables do not work as well)
Scant 2 cups cooked sliced or diced white or Yukon gold potatoes, fresh or 1-15 ounce can (if using canned, rinse and drain)
8 ounces cooked, lightly seasoned, and diced seitan or other prepared vegan meat product
Directions:
Preheat oven to 375 degrees. Line baking sheet with parchment paper or silicone baking mat and set aside. Place biscuits on prepared baking sheet, 2 inches apart.
Using the center ring of a donut cutter if you have one or something like a shot glass, cut a circle out of center of each biscuit to create a bagel shape. Place these small disks around and between biscuits on baking sheet. Brush the tops of all with melted butter or oil and sprinkle liberally with Everything Bagel seasoning. Bake according to package or recipe directions, usually approximately 15 minutes.
Meanwhile, in a large skillet or Dutch oven, combine flour and nutritional yeast. Cook, stirring continually, over medium to medium-low heat until toasty in aroma and golden brown. Avoid scorching. Add garlic and onion powders and slowly stir in vegetable oil to create a thick paste or roux.
Gradually whisk in warm vegetable stock until mixture is thick and creamy. Cook for about 3 minutes. Whisk in Tofutti Better Than Sour Cream and cook an additional 2 minutes or until very thick. Stir in mixed vegetables, potatoes, and seitan/vegan meat. Place in oven after removing biscuits and bake approximately 20 minutes.
Alternatively, you may transfer filling mixture to an oiled 8 or 9-inch baking dish before baking. Place biscuits on top, touching, and serve immediately, passing any biscuits or center disks that will not fit.
