Green Bean Bundles

Ingredients:

1 sheet vegan puff pastry, approximately 10 x 10” (thawed according to package directions)

1/2 cup Tofutti Better Than Cream Cheese (plain or Smoked), slightly softened at room temperature

Approximately 64 thin green beans, trimmed to your preferred length and blanched for a couple minutes in boiling salted water, then rinsed with cold water and drained

Suggested Accompaniment: use Tofutti Better Than Sour Cream with your favorite flavors and spices to make a dipping sauce

Directions:

Preheat oven to 400 degrees. Line baking sheet with silicone mat or parchment paper. Lay sheet of puff pastry on work surface and smooth with hands to flatten. Spread evenly and to edges with Tofutti Better Than Cream Cheese. Slice into 8 even strips.

Gather together 8 green beans into a kind of cylinder. Place at one end of a strip, centering over the strip, and roll tightly to make a band or belt. Seal end with a dab of water. Place on baking sheet, seam side down, and continue with remaining pastry and beans.

Bake for 15 minutes or until golden brown. Serve immediately with dipping sauce of your choice.
