Spicy Potato Dumplings
Dumplings:
Ingredients:
1 potato
Equal parts flour to potato
3 tablespoons water
Directions:
Peel and boil potatoes until tender. Mash potatoes until creamy, then add flour and water to knead into dough. Roll dough into small dumpling-sized balls.
Spicy Sauce:
Ingredients:
1.5 tablespoons Tofutti Better Than Cream Cheese
1 large Thai chili (or chili of choice)
1 green onion
1/2 teaspoon sesame oil
1/2 tablespoon soy sauce
Juice of 1/2 lime
Directions:
Chop or dice chilis and green onion. Combine all ingredients in a small bowl. Set aside.
Garnish:
Ingredients:
3-4 basil leaves
5-6 cilantro leaves
1/4 teaspoon black sesame seeds
Directions:
Add dumplings to boiling water. Boil until floating (approximately 3 to 5 minutes). Pour out most of the water, reserving 1-2 tablespoons in pot.
Coat dumplings with Spicy Sauce. Simmer on low heat until smooth and dumplings are well coated. Add water if necessary.
Plate and garnish.
