Roasting the cheese with tomatoes, garlic, and thyme for 35 virtually hands-free minutes renders a creamy and tangy rustic sauce this is elegant enough for company and crowd-pleasing enough for the kids. If you use pasta rather than spiralized vegetable “noodles,” this recipe requires two dishes, but who’s counting? It will be worth it regardless.
